Abstract:
This dataset reports the droplet diameter of surfactant stabilized dodecane in water emulsions. Emulsions were stabilized with three different surfactants (Sodium dodecyl sulfate, Cetyltrimetylammonium bromide, and Triton X-100). Silica particles were suspended in solutions by either gentle mixing or vortexed mixing and zeta potentials were measured. Droplet diameters are also included for these solutions.

Methods:
Sodium dodecyl sulfate (SDS, 99%) cetyltrimetrylammonium bromide (CTAB, 99%) Triton X-100 (98%) Hydrophilic fumed silica particles (Aerosil 200) Dodecane-in-water emulsions: SDS (approx. 16 mM); CTAB (approx. 2.0 mM); Triton X-100 (approx. 0.4 mM) Base emulsions: 0.2 mL dodecane, 1 mL surfactant solution, vortexed at 3000 rpm for 1 min 2 mixing methods: gentle mixing (slight shaking to avoid foaming) or vortexed (3000 rpm for 1 min) Samples rested for 24 hr after mixing Image-J measured average droplet size and distributions of approx. 200 droplets Gatan Alto 2500 cryo preparation system attached to a Zeiss Sigma VP field emission scanning electron microscope used to examine to droplet structure Zeta potential measured with malvern Zetasizer Nano-ZS (zeta potential measurement error was less than 2%)
