Abstract:

This dataset includes the numerical data for evaporation of the dispersed phase of hexane-in-water emulsions, comparing molecular surfactants to ultrathin plate-like materials as potential emulsifiers. This data supports the paper “Two-Dimensional Materials as Emulsion Stabilizers: Interfacial Thermodynamics and Molecular Barrier Properties,” DOI: 10.1021/la500216n.

Purpose:

This paper analyzes the thermodynamic forces that allow ultrathin plate-like materials like graphene oxide to act as a Pickering stabilizer and proposes a thermodynamic model for the stabilization of oil in water emulsions by there materials. Using the physical properties of two dimensional materials and experimental data, we demonstrate unique properties of graphene-based materials at the liquid-liquid interface.
